Byrdi is tucked away within Melbourne's vibrant new food precinct (don't call it a food court), Ella. It was a new entry at No.80 in The World’s 50 Best Bars 2020, which is especially impressive given the venue only opened in 2019. Byrdi is seriously cool, coming complete with its own lab for creating bold new ingredients, but don't go thinking this is an overly-reverent experience: you're still going to have a damn good time. The current cocktail list is based on the bartenders that have most inspired bar owners Luke Whearty and Aki Nishikura: try the GN Chan, enhanced with chicken fat caramel, waffle milk, black honey and artichoke, alongside moreish small plates ranging from prawn toast with pepperberry mayo to stracciatella with herby jam and fried capers.
