When Maybe Sammy opened in 2019, it was billed as the hotel bar without a hotel around it. Inspired by the grand hotel bars of Europe, and reinterpreted and adapted for Sydney's egalitarian, irreverent culture, what Maybe Sammy did – and does to this day – is give its guests an experience with a smartly packaged combination of theatrics, attentive and fun service.
Step inside its doors on an otherwise dreary stretch of street in Sydney's sandstone district The Rocks and you are enthusiastically greeted and by pink-jacketed bartenders who mix drinks theatrically, dance while they shake their tins and pour elevated takes on the cocktail canon.
It's Australia's most awarded bar for the last decade, picking up accolades at home and abroad, and with good reason – the cocktails feature small touches to draw you in such as cracking through an ice cap to reveal the drink below, or serving brightly hued blue cocktails in inflatable pool toys. What its team of smart, knowledgeable bartenders and hosts ensure is that whenever you walk through those doors, you're whisked away from what's outside and you leave feeling better than you did when you walked in with a story to tell the next day to boot.
