Low-waste classics with a twist in a grand setting

Locale Firenze, housed within the historic Concini Palace, offers a unique blend of centuries-old Tuscan grandeur and cutting-edge mixology. The building, which dates back to the 1200s with elaborate Renaissance features added in the 1500s, was once the residence of a powerful diplomat during the time of the Medici family. Today, this historical backdrop is the setting for spectacular gastronomic experiences.

The innovative cocktail programme is led by bar manager Fabio Fanni, who has positioned the bar as one of the leading venues in Italy. Fanni and his team use modernist techniques, traditional methods and laboratory technology to craft a low-waste menu that is both surprising and sustainable. Their approach is to reimagine classic flavours with a forward-thinking twist, often drawing inspiration from seasonal produce. The menu, which is short and to the point, covers a wide array of preferences. It's based on recognisable formulas given the Locale touch: the Foglia is a gin sour with herbaceous notes of mint, basil and hemp, while the Manhattan calls for marsala and a powerful combo of kombucha and cold-brew coffee.

Culinary influences are never far away either, with the very Italian association of butter and sage playing a star role in the Green Fizz. Locale, after all, is also an award-winning restaurant. Since September, the dialogue between the kitchen and the bar lab has been strengthened with the launch of a unique pairing experience in Labo-ttega, the bar's lab, located in the spectacular, vaulted medieval basement.
