Product-driven mixology spotlighting the abundant pantry of Peru
Since opening four years ago, there's been a buzz about the Lima-based establishment that spotlights the diverse flavours and ingredients of Peru: the bar picked up the One To Watch award in 2023 and stormed up the charts to No.16 in The World's 50 Best Bars 2024.
Led by Alonso Palomino and Gabriela Léon, a husband-and-wife team who are respectively bartender and chef, and Gabriela's sister Alejandra León in front of house, every detail has purpose, from the three-bowl spoon designed by the chef for the olive, sea lettuce and trout caviar garnishes for the 3 Sips Martini to the Oca Mashua made with an Andean distillate of red oca, mashua and pickled tubers.
Product-driven mixology and Peruvian identity – from Amazonian fruits to Andean potatoes, pisco and agave distilled at more than 3,000 metres above sea level – is evident in every cocktail and dish, proudly spotlighting the country's diversity and seasonality, as well as the farmers and communities behind the produce. There's often a nod towards the insect after which the bar is named, such as Bee's Knees with an Amazon twist that uses mandarine-lime and stingless bee honey or the rum-driven Zombee that uses bee falernum and citrus fruits.
While the original establishment catered for 22, there's good news for cocktail lovers: The capacity at Lady Bee's new venue has doubled, so more people can savour the work undertaken by the team awarded the Michter's Art of Hospitality Award 2025.
