Drink Kong, a bar founded by renowned Roman mixologist Patrick Pistolesi, is a vibrant fusion of retro-futuristic design and cutting-edge cocktail technology. Pistolesi, a celebrated figure in the global bar community, has steered Drink Kong to a consistent presence on The World's 50 Best Bars list. The bar's forward-thinking approach is evident in its current menu, Flux, which takes inspiration from "the science of the future". As ever at Kong, the menu invites patrons on a sensory-driven journey. Drinks have names and ingredients but they're invited to let themselves be guided by sensations and their desire for simplicity or innovation.

For newcomers, Pistolesi likes to highlight two cocktails which have become Kong standards and remain on every menu. They represent what the bar is about: a love for art, for flavours, for Japan and Italy. Canova is a gimlet made with a cordial evoking the tastes and aromas of the sea, and named for the inventor of neoclassicism in a nod to Drink Kong's goal of creating modern classics. The second one is the Gaijin, a celebration of Japan, a country that holds a deep sway on Pistolesi. Mixing Japanese whisky and a miso cordial, it's the perfect summation of Drink Kong as an immersive and sensory journey.
