Baba au Rum's reverence for sugarcane spirits is obvious – it's all in the name – with a back bar boasting more than 400 rums. The bar honours the Tiki tradition, and classic rum cocktails are springboards for innovation. For example, the Supremus n°58 is an inventive twist on the Ti Punch, featuring a rum blend, falernum, tea and summer fruits. The team also leverages its expertise with exotic ingredients to create wonderful cocktails with other spirits. The Beatnik Paloma, its unique take on one of the world's most popular long drinks, is made vibrant by a mix of tequila, mezcal, beetroot and black cardamom, and is a perfect example of the bar's creative range.
