Woman shares £1.31 two-minute meal that helped her lose six stone

A woman has revealed the budget-friendly and simple lunch she credits with her stunning weight loss of more than six stone. It comes as a woman who used her diabetic dad's blood test was shocked into losing seven stone.
Fitness coach Emma Logsdon, known as Em, battled weight issues from childhood due to hyperthyroidism, which was diagnosed when she was just 11-years-old.
By 2021, weighing 215lbs (that's 15st 4lb or 97.5 kilos), Em committed to consistent exercise and eventually embraced bodybuilding. Crucial to her six-stone transformation was overhauling her diet, particularly through establishing a "daily lunch" habit.
This meal, she insists, is both quick to make and wallet-friendly, requiring only minutes to assemble whilst keeping costs down, reports Surrey Live.
She outlined her method in a TikTok clip, explaining: "Two minute lunch. 40g protein. Only $1.70 (£1.31)."
Em continued: "First things first: grab a big old bowl cause we're just gonna be throwing a bunch of stuff in here. So you're going to take your big bowl and you're going to set it on your food scale, tear it out, and you're going to add 110g of plain white rice, jasmine rice."
She also noted that the rice was cooked beforehand, making the preparation more straightforward, before proceeding to incorporate 81g of green beans into her meal.
She said: "Okay, we have our rice and we have our green beans.
"Now we're gonna add our pre-made chicken. Literally all you have to do is get chicken breast, snip into little bits, season it how you want, and then throw it in the air fryer."
Once she had gathered her ingredients, Em explained that the only task remaining at mealtime was to warm everything in the microwave for roughly a minute before finishing the dish with some avocado.
She proceeded to reveal the meal's nutritional breakdown and cost - 472 Kcal, 48g carbs, 13g fat, 40g protein and the wallet-friendly price of $1.70 (£1.31), calculated by dividing the ingredients into portions that could create multiple meals.
Em's video became a sensation, racking up more than a million views. Many viewers contributed their own culinary tips and praised Em for her meal concept.
Raquel216 advised: "I recommend using brown rice or quinoa instead of the white rice. My nutritionist told me to avoid white rice and white bread."
This aligns with guidance from nutritionist Rhiannon Lambert on the Zoe podcast, who recommended substituting brown rice and pasta for white varieties to boost fibre intake and improve carbohydrate quality in your diet.

Some users questioned the protein levels in Em's meal, but these concerns were quickly addressed when Em replied: "It's 4 oz chicken, a very typical serving size! 35g protein there, 1g from avo, 1g green beans, 3g from rice."
Another foodie, Lippy Linguist, offered a tip: "I found frozen avocado in the freezer section the other day. It's cut into chunks so you just pour out what you need and it defrosted beautifully."
