Several years ago, the Specialty Coffee Association began working with the National Coffee Association USA to understand the impact of specific coffee flavor attributes on consumer perception. To our surprise, of all the sensory attributes, the flavor "roasted" was the one consumers told us made a coffee most appealing. It shouldn't have been a surprise- the roasty, toasty flavor notes are central to coffee's flavor profile- and consumers are right to value them. It's not an attribute we talk a lot about in specialty coffee- but why? We work hard to balance the "roasted" notes in coffee with other flavors, and we put a ton of effort into perfecting our roast profiles- and consumers know that. 70% of consumers are more likely to buy coffee when the roast level is specified: the most important factor in our survey. My takeaway for coffee businesses? TALK ABOUT ROAST AND ROASTING IN YOUR MARKETING. Consumers know that roasting is what makes coffee special and delicious. They like the flavors that roasting brings to coffee. Light roast, dark roast, medium... whatever. It might seem obvious- I mean all coffee is roasted- but consumers are telling us they care about roasting. Let's pay attention to that. Our WRAP Americas team have joined forces with Hamilton County ReSource to launch a dynamic consumer education campaign, #WildAboutSavingFood. The goal: help families save money and reduce food waste, an issue that costs the average American $800 a year. Because wasting food doesn’t just waste the money you paid for it — it wastes all the resources that were used to produce, transport, package, and dispose of it. And when it gets to the landfill, decomposing food releases environmentally-harmful gases. This campaign goes beyond awareness.
