Thank you to Dr. Andrew Polaszek for meeting with two MDPI colleagues at the Natural History Museum, London. Dr. Polaszek is a Section Board Member for the journal Insects MDPI and President of the International Society of Hymenopterists. During his time with MDPI, Dr. Polaszek has published seven articles within Insects and one within Pathogens MDPI. At their meeting, our colleagues spoke with Dr. Polaszek about his experiences working with Insects and the importance of optimising the peer review process within narrower fields of research where there are fewer experts available to review. We look forward to working more closely with Dr. Polaszek in the coming months. #MDPI #AcademicPublishing #NaturalHistoryMuseum #Insects

All articles in Beverages MDPI (ISSN 2306-5710) Vol 11, Issue 4, are now freely available to access, read and download: https://brnw.ch/21wXb9j COVER STORY: Brewing yeast development is entering a new era, “Biotechnology 3.0”. This article by international researchers highlights the main approaches driving this transition and their respective pros and cons. Genetic engineering enables multiplexed modifications, though its application in Europe remains restricted by regulations and consumer acceptance. Non-GMO strategies, such as adaptive evolution, mimic natural selection to improve fermentation traits, while microbial consortia challenge the classical concept of pure cultures by exploiting cooperative strain interactions. Meanwhile, artificial intelligence is emerging as a powerful tool with which to design and predict yeast “cell factories”, accelerating optimization and fostering brewing innovation. Collectively, these strategies support more efficient, sustainable fermentations and beers with novel aromatic profiles. Read more: https://brnw.ch/21wXb9j #mdpi #openaccess #yeast #research
