Thank you for nine years! 2016-2025. Please follow along with our new brand, Dappled Tonic, the Pacific Northwest's first tonic water. This is a mixer that goes beyond gin, both in cocktails, and as a satisfyingly adult softdrink.
Our Spirits
Inspired by the forests of the Pacific Northwest, Faith Dionne hand forages wild botanicals. From the treetops to the forest floor, the riverbanks to the deep woods, she gathers the ingredients for her craft spirits to give you a taste of Oregon that you can't get anywhere else.

JAZ Spirits is produced in micro batches due to the seasonal hand harvested quality of our featured botanicals. Responsible foraging is practiced by Faith and her family in Oregon's National Forests.
Take Your Cocktail to the Forest
This month’s featured cocktail recipe celebrates Dappled Tonic's release.
1.5 oz Old Tom Gin
7.5 oz Dappled Aromatic Tonic Water
1 slice Orange or herb sprig
Pour gin over ice in a tall glass or a copa, gently pour in tonic water and stir very lightly. Garnish and serve.
