Apollo in Heartopia is just one of many butterflies you must catch to fill out a section of your Insect Collection Journal.
This specific Insect likes to hang around one specific part of Heartopia, which significally reduces the distance you need to travel in order to find them. However, they do need to be caught as part of an event. Remember, capturing this will help boost your progress in the Insect Catching Hobby.
On that note, here's where to catch Apollo in Heartopia.

You can catch Apollo as part of the Bait the Insects event on Onsen Mountain in Heartopia. Now, this is one of the earliest bugs you can get as part of this event as you only need to be Level 1 in the Insect Catching Hobby for them to spawn.
Apollo can appear all day in Sunny, Rainy, and Rainbow weather during the Bait the Insects event. So, despite needing a specific event, they have very little spawn requirements.
So far, we've had the most luck catching Apollo on the lower part of Onsen Mountain during Bait the Insects, especially near the water. They're a slow-moving butterfly, so if you angle yourself right and aim properly then they should be pretty easy to catch with a single bubble.
