Cheat's chocolate fondant


SERVES 4

  • 50g plain flour sifted
  • 55g icing sugar sifted
  • 90g ground almonds
  • 2 medium egg whites
  • 100g unsalted butter melted
  • 160g good-quality dark chocolate melted
  • 4 small squares dark chocolate extra
 










TO SERVE
cream and berries of your choice


  1. Preheat the oven to 150C fan/170C/gas 3. Place the flour, sugar, ground almonds, egg whites, butter and melted chocolate in a bowl and mix well to combine.
  2. Spoon half the mixture into 4 x 125ml-175ml capacity lightly greased dariole moulds. Divide the extra chocolate squares among the moulds and top with the remaining mixture. Place the moulds on a baking tray.
  3. Bake for 15-20 minutes or until cooked but soft in the middle. Stand in tins for 5 minutes before turning out. Serve with berries and cream if wished.
