What can I use instead of coffee essence?

I have a recipe for a mocha cake which asks for 1 tablespoon of coffee essence.

I have tried to buy it everywhere without success, perhaps I should be using real coffee.

What is the best coffee to use as a substitute and how much should I use for a ten inch cake.
