I did not find any “upper limit” version, and my site has been running WC with PHP8.1 for over 4 months now, without any notable issue.

The minimum server recommendation to run WooCommerce smoothly is PHP 7.4. I’ve read several users upgraded their PHP version to 8.x and you could search the forums on how it turned out on their site.
I recommend that you try it first using a staging site without modifying your live site or impacting customers. Many hosts provide staging facilities, so it’s worth checking in with them. It’s also possible to do it using the free WP Staging plugin.
