This isn’t a theme-specific issue but rather a font issue. This is happening because of the font you are currently using for headings (Pasalo Chancho). The font has only two appearance variations, Extra Bold and Extra Bold Italic, which is why when you select the default option, the Extra Bold option gets selected.
The font doesn’t have a normal/regular (neither thin, extra light, Light, medium, semi bold, bold, black, extra black, thin italic, etc) variation of the font. Your best option would be to use a different font for headings globally and to change individual headings to the font you are using now or vice versa.

thank you for the explanation. I’ll try that.
the issue is happening with another font. I do have pásalo chancho as default font of headers, but it doesn’t make any problems when I use the font. But when I use another font as a header (Which is set to be the fin H2, H3, H4 H5 and H6) makes that font bold, even though it is set to normal in Gutenberg.
Let me try to change the default font and try again 🙂
