The training will be held from August 28, 2023. to September 1, 2023, in the morning session from 9 a.m. to 3 p.m.

- Monoportions, entremets, tartlets, and modern éclairs
- Preparation of modern creams like cremeux, namelaka, and whipped ganache
- Creation of fruit gels and jams
- Making colorful glazes
- Crafting decorations using tempered chocolate

- Creating multi-layered entremet desserts and monoportions
- Using and combining various types of silicone molds
- Making specialized sponge cakes
- Producing different types of crispy layers in desserts and understanding their purpose
- Creating fruit gels using various techniques
- Preparing choux pastry and craquelin crispy layers
- Shaping éclairs
- Making cremeux and namelaka creams
- Creating mirror glazes and understanding their application
- Modern chocolate tempering techniques and decoration making
- Using velvet spray for dessert decoration
