A Map of Bourdain’s Seattle ‘Layover’ Episode

Did you catch it? Anthony Bourdain’s Seattle episode of The Layover aired on the Travel Channel last night, showcasing everything the Emerald city— which Bourdain says has “one of the best and most interesting food scenes in America”—has to offer, from Shorty’s to The Walrus & the Carpenter, Paseo, Sun Liquor and Le Pichet. Below, in order of appearance, a handy guide of all 21 places Bourdain mentioned (he was seen visiting only 8 spots), along with his quotes on the restaurants. Also noteworthy: he stayed in the Beatles Suite at The Edgewater Hotel, botched the name of Canlis chef Jason Franey, puttered around town in an all-electric Tesla Model S, and sacrificed breakfast at Tilikum Place Cafe for a room-serviced bagel with smoked salmon and cream cheese.

If you missed the show, or even if you didn’t, watch these featured clips—including an unseen, extended clip from Rob Roy where Bourdain makes it clear to restaurateur Matt Dillon that he is not a fan of Chartreuse.

Seatown Seabar & Rotisserie

“One of Tom Douglas’s restaurants—a particularly good one—exactly the one I need right now,” as he ordered a fried egg sandwich with avocado and Dungeness crab, which he referred to as “Seattle in an English muffin.”

Rainshadow Meats

Speaking of Melrose Market: “Food vendors like Rain Shadow Meats are fiercely dedicated to supporting high-quality local producers and you’d be well-advised—really—to go look around and eat some stuff.”

The Calf & Kid (Artisan Cheese Shop)

“I don’t care what kind of hippies made this stuff, or even if they’re Dave Matthews fans, this stuff is great. I mean, really great!”

Salty's on Alki

“(Seattle) is the birth place of Jimi Hendrix, by the way. They named a drink after him. I’m sure he would have been honored.”

Canlis

“A stunningly beautiful example of non-ironic retro glamour. A kitchen with 60-some years of tradition that not only knows how to do a proper hunk of bleeding meat, but has taken on chef Jeff [sic] Franey—veteran of New York’s extraordinary Eleven Madison Park.”

Quinn's Pub

“They do great (burgers). There’s great local beers and the delightful wild boar sloppy joe, which is something they tell me you just gotta do.”

Rob Roy

“Renee (Erickson) and Matt (Dillon) suggest Rob Roy after my epic meal.” After Dillon convinces him to order Chartreuse: “I gotta tell you, this is challenging. It’s so herbivacious.”

The 5 Point Cafe

“It’s a dive bar that opens at six o’clock in the morning with breakfast happy hour from 6 to 9 am, which is pretty hard core.”

Tilikum Place Café

“They have a famous Seattle breakfast called a Dutch Baby—a cross between a pancake and a souffle. It’s crispy on the outside and dense and eggy on the inside.”

Paseo Caribbean Restaurant

“The sandwich with the cult following is the Cuban Roast: slow-cooked pork shoulder piled onto a split baguette with aioli, cilantro, pickled jalapenos, caramelized onions and Romaine lettuce.”

Little Uncle

“Locals flock here for curried fish fritters and Khao Soi curry noodles. Also popular is the gra poa moo: pork sauteed with gra poa basil, chilies and garlic with a fried egg and Jasmine rice.”

Shorty's

“A legendary spot that draws all types of personalities, from professional cooks to hipster douchebags.” Bourdain bolts shortly after a random dude asks him, “Is there any way you would hold, like, a knife to my throat?”

Sun Liquor

“The decor is tiki bar-slash-opium den. The bar makes its own gin and vodka, which goes nicely with fresh juice squeezed to order. And appropriately, they make a mean Mai Tai.”
