David Bouley’s Brushstroke Now Open

After weeks of previews, David Bouley’s long-in-the-works Japanese restaurant Brushstroke opened to the public last night. Bouley teamed up with the Tsuji Culinary Institute in Osaka for this project, which he has been dreaming about for the last decade. The kitchen is staffed with a number of cooks who taught at the famed culinary school, including Hiroki Murashima, who is a head chef along with Isao Yamada.

There is an a la carte menu and full selection of sushi available at the bar and in the lounge, but the main attraction is the tasting menu, which will be either six, eight or ten courses, priced between $85 - $135, depending on the season. Japanese design firm Super Potato created a stunner of a room, with big slabs of steel, a small bar, an exhibition kitchen, and a wall made up of thousands of paperback books stacked spine-in, so that they resemble blocks of wood. Brushstroke is open from 5:30PM-11:00PM, six days a week, and lunch will kick off this summer. Take a peek at the menu here, and do send any early reports our way.
