Isn't it quite plausible to use jupyterhub-sftp deployed as a docker container next to a JupyterHub, where the storage is mounted to the container?

It may be a pre-optimization at this point to provide that as I've heard no demand for it yet, but it seems like if could be relevant for any TLJH deployment for example.
