This pull request adds documentation for the vLLM Shenzhen Meetup. The changes correctly update both the main README.md and the detailed docs/community/meetups.md file. The new meetup is placed at the top of the lists to maintain reverse chronological order. The change to README.md also moves older meetup news to the 'Previous News' section, keeping the 'Latest News' section focused. The updates are consistent with the existing format, and I found no issues of high or critical severity.
