Motivation and Context
This PR updates the instructions for building an MCP Host/Client in C#.
The public API for creating a Client changed recently (modelcontextprotocol/csharp-sdk#723) and we need to update the documentation here because it refers to deprecated / removed classes.
How Has This Been Tested?
I've tested the new code in a local app.
