doc: typeset long options with argument as literal

We previously reformatted '--option' to `--option`. This patch reformats
'--option &lt;arg&gt;' to `--option &lt;arg&gt;`. Obtained with:

  perl -pi -e "s/'(--[a-z][a-z=&lt;&gt;-]* &lt;[^&gt;]*&gt;)'/\`\$1\`/g" *.txt
