Is emacs-builds a viable source to be added to the instructions?
I don't know enough to evaluate yes or no.
I recently used this a few days ago before installing doom.

I left a TODO in the commit
upon review by anyone knowledgeable of mac builds
I will update the comment similar to the other options listed

  • I searched the issue tracker and this hasn't been PRed before.
  • My changes are not on the do-not-PR list for this project.
  • My commits conform to Doom's git conventions.
    This commit does not comply to doom's conventional commits convention.
    I saw this afterwards.. the pull request title is edited to comply.

the main point is:

the emacs-build package is at v30
whereas mituharu/emacs-mac or emacs-plus is at 29 (as far as I can tell)

again, I am very new to these emacs packages for mac so I don't know enough to know if emacs-builds is better
at a glance it appears emacs-build is the latest, the edge, good mac support, etc

I think it'd make a good addition. Trouble is, docs/*.org is on our do not PR list at the moment, but I'll keep this open until the new docs are up, and I've incorporated emacs-build into them.

There is a fork of mituharu/emacs-mac that is on emacs 30
