[Doc] Include a high level overview of major FSE projects (#31295)

To help flesh out this document a bit more, I wanted to include very brief, high level descriptions of major FSE features. I'm torn as to whether this should exist as a separate document or whether it's okay to have within this one. Thoughts welcome always! For now, I think this would be good to include at a high level with perhaps, in the future, links for each or links to a more comprehensive overview doc.

These are separate projects from Full Site Editing though but are worth being aware of as they ultimately help the cause of getting more people adjusted to using blocks in more places.
