I know ExifTool is limited on what PDF Meta Data it can edit. However it would be nice if if could edit all the PDF data that was available to edit. https://exiftool.org/TagNames/PDF.html
In an ideal World ExifToolGui would come with the tool QPDF (I think it is bundled with other things).

After the PDF Meta data was edited ExifGui would run the command "qpdf --linearize in.pdf out.pdf" on the PDF file or files when the meta data was saved back. The ExifTool PDF docs suggest this.
