Update the star history chart to point to a working alternative. The current chart is broken due to GitHub stargazer API restrictions, so switch it over to a fixed solution that keeps the chart up to date.

The star history chart in the README is currently broken because the old service can no longer fetch stargazer data from GitHub. Update it to point to a working chart so the repository history stays visible.
