INGREDIENTS
• whole free-range chicken
• 5 slices of ginger
• 4 stalks spring onion (tied into a
knot)
• sesame oil for brushing the
Chicken
Dipping Sauce
• 3cm ginger (grated)
• 2 stalks spring onions (chopped)
• Small bunch of coriander
(chopped)
• ½ tbsp light soy sauce
• ¼ tsp salt
The Authentic

1. Thoroughly clean the
chicken and rinse with
water. Then stuff the cavity with
the ginger and spring onion.
2. Put on the preassure cooker
filled with water (water must
be cover the whole chicken)
and cook for 15 - 30 minutes
(depends on the size of the
bird).
3. Meanwhile, ypu can start to
make the sauce. Mix all the
sauce ingredients in a bowl.
Heat up the oil in a pan until it
begins to smoke, then turn off
the heat and pour the oil into
the bowl of dipping sauce. Stir it
around
and season with the soy sauce
to taste.
4. Once the chicken has fully
cooked, immediately remove
and put on bath of ice water for
a few minutes and remove the
herbs from the cavity. Brush the
skin with sesame oil and chop
up the chicken.
5. Arrange on a serving platter.
Garnish with sprigs of coriander
and spring onions. Serve with
the dipping sauce.

INSTRUCTIONS
Longan Soymilk Pudding
1. Combine sugar and agar-agar powder and mix well.
2. Pour into the pot and add water while stirring the agar-agar powder
until dissolved.
3. Pour in soy milk, evaporated milk and pandan leaves, bring to a boil
and turn off the heat.
4. Use a strainer to filter some of the slags to taste smoother.
5. Put it into a cup and let it cool for at least half an hour to allow the
pudding to solidify before adding the longan syrup and longan.
6. After closing the lid, put it in the refrigerator until it is completely cold
before serving.
