Why Audiobooks Are Brilliant

I freaking love audiobooks! I know a lot of people use them for their commute—I watched a vlog on YouTube recently where a group of friends listened to a mystery while on a road trip—but I love listening to audiobooks while I engage in my other hobbies.

The Perfect Companion for Everything

They’re wonderful while I’m playing cozy games like my latest obsession, Fields of Mistria. (That game is a must if you enjoyed Animal Crossing: New Horizons, Stardew Valley, or Coral Island and love a pastel colour scheme.) And I love listening to them while colouring or working in my journals. It feels very meta when I’m working in my reading journal while listening to an audiobook!

“It feels very meta when I’m working in my reading journal while listening to an audiobook!”

The Hidden Benefits

But there are many other benefits to audiobooks, like:

  • Giving your eyes a rest from screens and books
  • Improving your listening skills and concentration
  • Better time management—multitask like a pro
  • Accessibility for those with visual impairments or reading difficulties

Make It a Gift

With Christmas quickly approaching, now is the time to discover this amazing hobby for yourself—or it would make a wonderful gift! The current festive sale has incredible offerings, whether you want cute and cozy or dark and mysterious.

🎄 Lovelight Farms by B.K. Borison

Oh, the cute coziness of this book! It’s set on a Christmas tree farm with a friends-to-lovers romance and almost reaches Gilmore Girls vibes—but our next book surpasses them.

Perfect for: Rom-com lovers who want holiday cheer Listening time: ~10 hours

🌲 The Christmas Tree Farm by Laurie Gilmore

The epitome of seasonal cozy romance. The covers alone will hook you into this series (and there’s a colouring book!).

Perfect for: Anyone who needs a Gilmore Girls fix Listening time: ~8 hours

🐰 Peter Rabbit: Christmas Is Coming by Beatrix Potter

Peter Rabbit is just the sweetest. I can’t imagine anything better than listening to this while colouring by the fireside (sadly, I have no fireplace, so maybe one of those YouTube videos).

Perfect for: Family listening or nostalgic comfort Listening time: ~2 hours

🔪 The Most Wonderful Crime of the Year by Ally Carter

Gives festive Knives Out vibes but is much cozier. I listened to this last December while on holiday in Gran Canaria. It was perfect for keeping my head in the season while soaking up the sun.

Perfect for: Mystery fans who want festive without too dark Listening time: ~10 hours

📖 Little Women by Louisa May Alcott

This story just instantly transports me to the winter season. The March sisters’ warmth makes even the coldest days feel cozy.

Perfect for: Classic literature lovers and nostalgic souls Listening time: ~9 hours

👻 A Christmas Carol by Charles Dickens

One of the OG Christmas tales when Christmas tales were ghost stories. We need more Christmas ghost stories, I think.

Perfect for: Those who like their holidays with a side of spooky Listening time: ~3 hours

Cosy Reading The Lighthouse Keeper's Daughter Book Hazel Gaynor

Dark Cottagecore Bookopoly TBR

Hello, lovely readers!

I was so excited to play Dark Cottagecore Bookopoly this year, and despite working on many recommended reading lists, I’ve shamefully yet to actually start the game myself. So I decided to roll the dice and complete one circuit of the board. Normally I’d go one space at a time, but this time I’ve mapped out a route, gathered my prompts, and selected some books. Since I’m a mood reader, I won’t be tackling them in order—I’ll simply follow my instincts.

Before we dive into the list, I must tell you about a brilliant sale Libro.fm is running at the moment. Selected audiobooks are currently Buy One, Get One Free, AND if you’re a new member, you can actually claim SIX free audiobooks right now! How absolutely fantastic is that?! I’ve linked my picks to Libro.fm in case any of them takes your fancy and you can shop the sale here.

Bookopoly Dark Cottagecore Edition Board Game Box
This image is AI-generated by ChatGPT. I wish I could really make this box for the game!

If you’re new to Bookopoly: Dark Cottagecore Edition, it’s a free reading challenge I created, blending the whimsy of a bookish game with the cosy, slightly eerie charm of dark cottagecore. You can grab the board, prompt cards, and a few extras on my Ko-fi, and there’s a matching Storygraph challenge so you can track your progress. And for those who, like me, love keeping their reading beautifully organised, my 2025 Reading and Books Tracker Spreadsheet for Google Sheets is available on my blog—it’s the perfect tool for managing all your books and challenges in one place.

Books I Read

We had some glorious weather here in Ireland at the beginning of May, which always puts me in the mood to lounge on the patio, cocktail in one hand and a book in the other. So, that’s exactly what I did. It didn’t last long, but it was absolutely lovely while it did.

Side note: I recently discovered that the photo above – originally uploaded to my Unsplash—has been used in a scrapbook paper collection on Shein. Unsplash photos are free for any use, so that’s totally fine; it was just a bit surreal to see it there! If you like the photo, you can download it for free from Unsplash – no need to pay Shein.

  • Pride and Prejudice by Jane Austen, ★★★★★
    • This book needs no introduction – it’s a classic! Even if you’ve never read it, you’ve almost certainly heard of it and have a good sense of whether it’s your kind of story. Personally, I absolutely love it. I think this was my third read! I wanted to revisit it because one of my summer projects is to annotate a print edition using a kit from my shop.
    • Pride and Prejudice is ideal for readers who enjoy witty social critiques woven into slow-burning romantic dramas, where sharp banter and flawed characters challenge societal norms and personal biases.
    • Get a copy on Bookshop.org or Libro.fm
  • Ghost Walk by Cassandra Gannon, ★★★☆☆
    • A very light-hearted paranormal romance with a touch of humour. It was fun, if a little silly, and time travel plots tend to irritate me a bit so it’s a solid three stars from me.
    • Ghost Walk is ideal for readers who enjoy fast-paced, adventurous love stories blending historical intrigue with supernatural elements, where opposites—like a pragmatic skeptic and a charming ghost—unite to unravel mysteries across time.
    • Available on Amazon
  • Mothering by Ainslie Hogarth
    • I’m finishing up the month with this book currently on my ‘reading now’ shelf. I’m still in the early chapters, but it’s already hooked me.
    • Motherthing is ideal for readers who enjoy darkly humorous and emotionally intense horror stories that explore complex family dynamics and psychological struggles through a blend of domestic tension and supernatural elements.

Books I Bought

I didn’t buy much this month but I’m really excited about the books I got.

  • Problematic Summer Romance by Ali Hazelwood, contemporary romance
    • I bought this because I buy everything from Ali Hazelwood. I love her!!

    • Get a copy on Bookshop.org or Libro.fm
  • Eat the Ones You Love by Sarah Maria Griffin, horror, LGBTQIA+
    • I’m on a dark cottagecore kick this year and this book fits perfectly. Also, it’s giving Little Shop of Horror vibes.
    • Eat the Ones You Love by Sarah Maria Griffin is ideal for readers who crave darkly lyrical explorations of desire, identity, and the monstrous edges of human connection, wrapped in a story where love and hunger intertwine like twisting vines.

  • The Thrashers by Julie Soto, mystery, young adult
    • I’m really picky with YA but I’ve loved everything else I’ve read from Soto so I went ahead and got this one. I didn’t even read the blurb 😂
    • This book is ideal for readers who enjoy dark, fast-paced thrillers that explore the psychological complexities of teenage social hierarchies and the lingering consequences of bullying through a paranormal lens.

  • The Ballad of Songbirds and Snakes by Suzanne Collins, ★★★★☆, I have such mixed feelings about this book! It was so interesting to get a look inside the mind of a young Snow but it was strange at times to sympathise with him knowing what he’d become. But that mixed bag of feelings is a sign of an effective narrative!
    • The Ballad of Songbirds and Snakes is ideal for readers who enjoy morally complex, high-stakes narratives where flawed characters navigate ruthless power struggles in a dystopian world.

  • Sunrise on the Reaping by Suzanne Collins, ★★★★☆, I really enjoyed this addition to the series! I don’t feel the book was really needed but it was fascinating and heartbreaking to see how Haymitch becomes the man he is now.

New in my Etsy Shop

I’ve been updating some of my older listings lately and adding more templates to them. My style has changed a bit over the years but I didn’t want to alter the kits just update them with some extra templates to suit my current style.

One of these updated kits is the Victorian Books Ephemera for Junk Journals Kit. One of my favourite kits! I just felt it needed a little bit more so I added four more pages of templates. I want to update the cover image as well but haven’t gotten around to it yet. The cover image for listings is one of the hardest things to create! They can be the deciding factor on whether a kit sells at all and I really feel they’re not my strong suit.

Victorian Books Ephemera for Junk Journaling – Vintage Book Spines Digital Download Collection

Transport your creative projects to the elegant world of Victorian literature with the Victorian Books Ephemera Collection! This distinguished digital download features authentic vintage book covers and spines that will add a touch of literary sophistication to your journaling and paper crafts.
Each piece in this collection showcases the exquisite craftsmanship and design elements characteristic of Victorian bookbinding. From the gold embossing to the rich textile covers, these ephemera pieces capture the romance and sophistication of a bygone literary era. Create stunning journal pages, tags, and embellishments that evoke the charm of antique libraries and the timeless appeal of classic literature.

There’s something irresistible about the way horror captivates us (even when we’re too scared to look). The books in this list blend those eerie elements beautifully, offering stories that will keep you glued to the pages… even if you’re hiding under the covers.

March Bookish Wrap-Up: Reads, Buys & Creative Joys

Hello, friends! Another month has come to an end, which means it’s time for my monthly wrap-up.

I’ll be honest—this week has left me feeling a bit blue, so this post is lower energy than usual. You might notice I read very little in March, and I didn’t release anything new in my Etsy shop. Life has its ups and downs, and sometimes, we just need to embrace the slower moments. Lately, I’ve been frustrated with much of the online world, which led me to take a step back from my blog, YouTube, and even social media. In fact, I deleted my Instagram and deactivated my Facebook (though I kept Messenger for staying in touch with real-life friends). Meta’s ecosystem feels increasingly icky, especially with its AI-generated “influencers” and the recent controversy over stolen books. As if regular influencers weren’t hard enough to trust—now we have to worry about fake ones, too?

Okay, I’ll stop ranting—but sometimes, a little venting is necessary! I hope your March was filled with wonderful things, whether it was books, movies, games, or time with loved ones. Now, here’s a peek into my bookish (and not-so-bookish) world this month.

Books I Read

You might remember my excitement for the Irish Readathon—but then I discovered a new TV show and ended up binge-watching it instead. 🫣 This is exactly why I usually avoid readathons! I still plan to read the books I picked out… just not this month. Sometimes, we need a different form of escapism, and that’s okay.

    • Antarctica by Claire Keegan is ideal for readers who appreciate emotionally charged, introspective short stories that explore complex human relationships and the quiet, often haunting consequences of personal choices.

Books I Bought

I was relatively well-behaved with book purchases this month, though I did have to cancel a few pre-orders from Amazon. With the launch of Amazon.ie, I was worried about potential customs fees if I ordered from the UK site. I’d rather buy these books elsewhere, but they likely won’t be available in Irish bookshops.

What I’m Loving on Etsy

My Craft Room Journal Series from My Porch Prints

I picked up two My Craft Room kits from My Porch Prints this month to start a hobby journal. (Because, clearly, I needed another journal to work on…)

My plan? To document my experience streaming cozy games as a form of exposure therapy for social anxiety. Over the years, I’ve improved significantly—there was a time when I couldn’t leave the house without my husband or a friend—but I still have some hurdles to overcome. After stumbling across a discussion about using streaming as controlled exposure therapy, I decided to give it a try. My approach is to journal before and after short streaming sessions (no eight-hour marathons for me, thanks!).

I dipped my toes in yesterday with Planet Zoo… and promptly forgot to speak the entire time. So now, I’m brainstorming some talking points for next time!

Ideally, I’d love a gaming- or computer-themed journaling kit, but since those are hard to find, crafting-themed supplies will have to do. (Though now that I think about it, a writing-themed kit might work even better…)

There are five prompts for The Irish Readathon, but to be honest, I won’t be sticking too closely to them—I just want to enjoy reading more Irish books! That said, a few of my picks will probably fit the prompts anyway. If you’re curious, here they are:

  2. Read an Irish book with mythology/folklore
  3. Read an Irish book written by a POC / LGBT+ Author
  4. Read an Irish book that won an award
  5. Read an Irish book that fulfills one of your favourite past prompts

Books I Read

One of my personal reading goals for this year is to branch out a bit more from the romance genre, and I’m happy to say I made some great progress with that in February. I still read a few romances, of course, but I also dipped into some horror – which I absolutely loved – and a bit of literary fiction, which I found really enjoyable and thought-provoking.

My standout reads for the month were House of Hollow by Krystal SutherlandHome Before Dark by Riley Sager, and Study for Obedience by Sarah Bernstein. These three books have really stuck with me, almost like they’ve found a little home in my mind. I have a feeling I’ll be thinking about them for a long time to come.

Books I Bought

I’m really looking forward to the Irish Readathon this year – it’s always such a lovely event. I’ve picked up a few new Irish books, along with a couple of others that sounded interesting (like Cleavage – it definitely caught my attention). I also treated myself to a new release from one of my must-read authors, as well as some rereleases of old favourites.

I was really pleased to hear that Kresley Cole is giving her Immortals After Dark series a refresh with new illustrated covers. I believe she’s made a few updates to the stories as well, which is a nice touch. These books have been around for a while now – the series timeline spans about three years in the story, but the books have been released over nearly two decades. It’s great to see them getting a bit of a refresh, and I’m looking forward to collecting the new editions and revisiting the series. It’s always nice to return to a world you’ve enjoyed so much.

February Challenge Chronicles: Monthly Adventures in Media & Meals

Hello friends 🤎 Welcome to my monthly challenge series! This year, I’m diving headfirst into a set of fun and personal challenges that I’ve been meaning to tackle for ages—whether it’s working through my massive backlog of games, ticking off books from my StoryGraph reading challenges, watching films from different genres, or trying new recipes. Each month, I’ll be sharing my progress with you, giving my honest thoughts on what I’ve discovered, enjoyed, or even struggled with along the way.

This post contains affiliate marketing links. If you purchase using a link I may earn a moderate commission. Thank you for supporting the blog 🤎

I hope these posts encourage you to try something new—whether it’s diving into a book, experimenting with a recipe, or finally playing that game you’ve been meaning to start. Join me on this journey, and let’s make it fun together!

If you enjoy following along and want to stay updated, why not join my newsletter? Not only will you get these updates straight to your inbox, but you’ll also be the first to hear about my latest recommendations, bookish thoughts, and even some exclusive content I won’t share anywhere else. Plus, it’s a great way to stay connected!

Don’t be shy—if you’ve got suggestions, whether it’s a book you think I’d love, a game I should play, a movie recommendation, or even a recipe, drop a comment below. I’d love to hear from you!

The StoryGraph Challenge:

Every month, I’m reading at least one book for one of the StoryGraph challenges I’ve joined. It’s a great way to step outside my comfort zone and explore new genres, themes, and authors I might not have chosen otherwise. I’ll be sharing my thoughts on the book, how well it fit the challenge, and any standout moments that stuck with me.

Have you read this one or something like it? I’d love to hear what you thought, or if you have any recommendations for my next read!

  • Book Title: Home Before Dark by Riley Sager
  • Challenge Prompt: The StoryGraph Onboarding Challenge – Read a book published between 2010-2020 that fits your reader profile but excludes your most-read genre.
  • Review: My most-read genre is romance, but dark and eerie books are also part of my reader profile, so Home Before Dark by Riley Sager was a perfect choice for this prompt. I’m a huge fan of horror and thriller films, and I’ve been wanting to dive into more books from these genres—so I was excited to pick this one up. And wow, I absolutely loved it! This was my first Riley Sager book, so I wasn’t prepared for just how twisty the story would be. Maybe that’s the norm for them, but for me, it was a wild ride! Even after the big reveal, I’m still questioning certain moments and piecing things together in my head.
  • Rating: ★★★★★
  • Takeaway: I’ve been having such a great time with The StoryGraph Onboarding Challenge—so much so that I’m seriously considering doing it again this year! It’s been a fantastic way to explore The StoryGraph’s features and, more importantly, discover some incredible books I might not have picked up otherwise.

Game Quest:

My game library is packed with titles I’ve never played—some have been waiting for years! So, I’m making it a goal to pick one each month and finally give it a go. I’ll share my first impressions, how far I got, and whether it lived up to the hype.

Have you played this game before? Drop me a comment with your tips or thoughts, and let me know what I should play next!

  • Game Title: Behind the Frame
  • Platform: Steam on PC
  • Genre: Puzzle, Wholesome
  • First Impressions: The artwork is beautiful, which feels so fitting for a game centred around artists. The puzzles were fairly simple, but that wasn’t really the main focus—it was all about the storytelling and the connection between the two characters.
  • Progress: I completed the game in just over two hours (possibly even less, since I left it running when my in-laws visited). I spread it out over two days, but it’s short enough to finish in one sitting.
  • Overall Experience: A beautifully crafted and emotional experience that really stuck with me. The story was heartfelt, and the visuals were gorgeous—but I only wish it had been longer!

Film Focus:

Each month, I’m diving into a different film genre with a movie I’ve never seen before. I’m skipping the big blockbusters and mainstream hits in search of hidden gems—whether it’s an underrated indie or a forgotten classic. I’ll be sharing my thoughts on the story, performances, and what made the film stand out.

Know of any underrated films I should check out? I’m always on the lookout for recommendations, so feel free to share your favourites for next month!

  • Movie Title: Small Things Like These
  • Genre: Historical Drama
  • Why This Genre: Historical dramas aren’t usually my thing—they tend to be a bit too heavy and depressing for my taste.
  • Review: I chose this film because it was set and filmed in my hometown, which made it feel even more personal. Seeing familiar locations, like the setting for the laundry (which also serves as the setting for the school where the main character’s daughters go), was surreal—especially since that’s the school I actually attended. As for the film itself, it was deeply emotional but incredibly well done. I appreciated how the story centred on Murphy’s character and explored how Ireland’s treatment of women also impacted men. The Magdalene laundries were a horrific chapter in Irish history, and while it’s heartbreaking to watch, films like this are important reminders of the past.
  • Rating: ★★★★☆
  • Genre Reflection: Historical dramas still aren’t my thing, but I’m glad I watched this one. It was a powerful film, and despite my usual reservations about the genre, it left a lasting impact.

In The Kitchen:

Each month, I’m challenging myself to try a new recipe, finally putting my collection of bookmarked cookbooks to good use! I’ll share how the cooking process went, our honest thoughts on the flavour, and whether it’s a dish worth making again.

Do you have any go-to recipes for picky eaters? Let me know—I’m always on the lookout for something new to try, and I might just give it a go in a future post!

  • Recipe: Naan (sort of)
  • Source: I say “sort of” because I didn’t actually use a traditional naan recipe. Instead, I used the basic bread dough recipe from my bread machine, set it to the dough cycle, and then rolled out portions by hand. It’s not technically naan, but it worked surprisingly well!
  • Cooking Experience: Super easy, especially with the bread machine doing all the mixing and kneading for me. The trickiest part was rolling them into a decent shape—I ended up making them a bit smaller than intended, but since they were quite filling, it actually worked out fine.
  • Taste Test: Delicious! That said, I did have my pan a little too hot at first, so the first few puffed up like pita bread. Still, they tasted great, and I’ll definitely be making them again. They freeze really well, so it’s handy to have a batch ready for curries—or even for making mini pizzas.
  • Recipe Rating: ★★★★☆ It loses a star because, let’s be honest, it’s not really naan—but it’s a solid alternative!

Did anything from this month’s challenge catch your interest? Or maybe you’ve got your own fun goals you’re working on? I’d love to hear all about it! Let’s chat in the comments—whether you have recommendations, want to share your thoughts, or just fancy a bit of friendly banter, I’m all ears.

Cosy Reading Corner

Oh, my gosh, I was completely captivated by House of Hollow by Krystal Sutherland! I’ll admit, I initially picked it up because of that stunning, dark cottagecore-esque cover, and I’m so glad I did. This book is as haunting and alluring as the Hollow sisters themselves—it sinks its claws into you and doesn’t let go, leaving a lasting impression long after you’ve turned the last page. The story is twisty, unpredictable, and utterly mesmerizing, with an eerie beauty that lingers in your mind. It’s the kind of book that feels like a dark, enchanting spell you never want to break.

The story follows the three Hollow sisters—Iris, Grey, and Vivi—who mysteriously disappeared as children and returned a month later with no memory of what happened. Years later, the sisters are still grappling with the aftermath of their disappearance, which left them with strange, otherworldly traits. When Grey, the eldest sister, goes missing again, Iris and Vivi must confront the dark secrets of their past and the supernatural forces that seem to be pulling them back into a world they barely understand.

Cosy Gaming Escape

EA re-released The Sims and The Sims 2 at the end of January, and of course, I had to get them! I was completely obsessed with The Sims as a teenager, and when The Sims 2 came out, that obsession only deepened.

Now, I grew up in the back-arse of nowhere in Ireland, where computer games were very much seen as a “boys’ thing,” so getting my hands on a game—let alone an expansion pack—was a rarity. In fact, I didn’t even know expansion packs were a thing until The Sims 2 introduced me to a whole new world of possibilities. I initially picked up The Sims for the nostalgia hit, but to my surprise, I’ve actually been enjoying it just as a game in its own right. And the best part? The Legacy Edition comes with all the expansion packs, which I never got to experience when I was younger! It’s brilliant for The Sims 1, but when it comes to The Sims 2? My inner tween/teen is absolutely squealing.

The Sims 2 was the game for me. Even after The Sims 3 came out, I kept going back to it. I spent hours making my Sims ridiculously rich, throwing them into chaotic social dramas, sending them on dream holidays, and, of course, embracing the supernatural side with vampires and werewolves. I loved it. And now, getting to revisit it all over again has been such a joy. The nostalgia has me feeling all kinds of warm and fuzzy, but honestly? The games are still just as fun as ever.

Relaxation Rituals | Cosy Blankets & Fluffy Cats

It’s been properly cold here this winter, so we’ve been making the most of the season by staying as cosy as possible—wrapped up in fluffy blankets, sipping warm drinks, and, of course, enjoying plenty of cuddles with the cats.

Some of my favourite evenings lately have been spent curled up on the couch, a purring kitty snuggled beside me, either lost in a book or immersed in a game on my Steam Deck. And, occasionally, there’s even a little glass of wine involved—because why not? I’ve also recently discovered some wonderfully cosy lo-fi videos on YouTube and they’ve been the perfect background noise for reading or playing chilled-out games.

There’s just something so special about these quiet, peaceful moments. That feeling of being safe and warm in your own space, surrounded by the little comforts you’ve earned throughout the day—it really does warm my heart.

Cosy Recipe | Shepherd’s Pie

For me, Shepherd’s Pie is one of the most wholesome, comforting meals out there. It’s hearty, filling, and absolutely perfect for winter. My mam used to make it all the time when I was growing up (still does, actually—just not for me anymore!), so it’s always been a bit of a nostalgic dish for me. There’s something so reassuring about a big, warm plate of it on a cold evening.

At this point, I’ve made Shepherd’s Pie so many times I barely follow a recipe anymore—it’s just instinct. The basics are simple: minced meat (traditionally lamb, but honestly, use whatever you like—I’ve made it with beef, turkey, and even vegetarian mince), onions, peas, carrots (or whatever veg you fancy, or none at all if that’s your vibe), and a good, rich gravy. And when I say gravy, I mean deep brown Bisto-style gravy. It’s all topped off with a layer of creamy mashed potatoes and, for good luck, a generous sprinkle of grated cheddar. Because cheese makes everything better.

I usually serve it with extra veg on the side, mostly because I struggle to digest red meat, so I try to balance things out by eating more vegetables than anything else. But honestly, that’s the beauty of Shepherd’s Pie—it’s one of those wonderfully adaptable meals that you can tweak to suit whatever you like.

Since that’s more of a casual guide than a proper recipe, I thought I’d share one from one of my favourite Irish chefs, Donal Skehan. His version is a bit more on the fussy side, but hey, that’s what chefs do, isn’t it?

Shepherd’s Pie with Champ Mash from Donal Skehan (view on Donal’s website here)

Ingredients

  • 2 tbsp of olive oil
  • 1 large onion , chopped
  • 2-3 medium carrots , chopped
  • 1.5 lbs minced lamb
  • 2 tbsp of thyme roughly chopped
  • 1 3/4 cups beef stock
  • 2 tbsp tomato purée
  • 2 tsp of Worcestershire sauce
  • 1.75 lbs potatoes, peeled and cut into chunks
  • 3/4 stick butter
  • 1/2 cup milk
  • 6 spring onions, finely sliced
  • Sea salt and ground black pepper to season

Method

  1. Heat 1 tablespoon of olive oil in a medium frying pan over a medium heat and soften the onion and carrots for 5-6 minutes. Turn up the heat and allow the pan to get hot before you add the minced lamb and thyme. Using the a fork break up the meat and allow to brown and cook through for 3-4 minutes.
  2.  Pour over the beef stock and stir through the tomato purée and Worcestershire sauce until combined. Bring to a steady simmer, then partially cover and cook for 45 mins.
  3.  For the mash topping, add the potato chunks to a pot of cold water, cover, place over a high heat and bring to the boil. Reduce heat and simmer until the potato is tender when pierced with a fork.
  4.  When the potatoes are cooked, remove from the heat, drain into a colander, then add back into the pot with the butter and milk. Using a potato masher, mash the potatoes until smooth and creamy.
  5.  Add in the spring onions and season with sea salt and ground black pepper, stirring to combine.
  6.  Preheat the oven to 180°C/350°F/Gas Mark 4. When the lamb is ready, season with sea salt and ground black pepper and transfer to an ovenproof baking dish and top with the champ mash, using a spoon to make a nice topping. Give the topping an extra sprinkle of ground black pepper and bake in the oven for 25 mins until the top is starting to brown and the mince is bubbling up around the edges. Serve straight away for a delicious and comforting supper!
