    • Removes all mentions of rauthy from the project

    • Fixes the Dockerfile
      adduser doesn't seem to exist on debian:latest, so I replaced it with useradd, which does exist.

    • Modifies the Dockerfile to build and run symfonia, rather than symfonia-api & symfonia-gateway
      Since the actual API and Gateway are actually run through the symfonia crate.

    • Changes the repo setup to somewhat improve user & development experience.
      symfonia.toml is now gitignored. The user will now copy symfonia-example.toml to symfonia.toml so that their local config doesn't affect the git history.

    There were some loose database env vars being used in the symfonia docker compose project but aren't actually used anywhere. I considered updating the symfonia config loader to override the database config if env vars are present, but I believe that's out of scope for this PR, since the main goal is getting the project functional for developer onboarding.

    The downside is that there is duplicate information (the database credentials need to be in both .env and symfonia.toml), but this is no different to how it already was.
